Ditch the dessert, but keep the decadence
Opening with Greek lemon and orange oils, bright, clean, almost austere, like citrus peel twisted over a plate before the syrup arrives.
Then the heart turns unmistakably baklava: honey warmed to a soft gloss, roasted walnut and pistachio darkened at the edges, phyllo caramelised into brittle golden sheets. Two roses rise through it, de mai and Isparta, less bouquet than rosewater, threading floral ethereality into the sugary depths.
The base is where it becomes Greek, not just sweet. Sandalwood and bran give a creamy, toasted, bready hum; Peru balsam, benzoin, and labdanum thicken into resinous warmth. Olibanum and gurjun bring a faint incense-smoke, vetiver and oakmoss pull it down into shadow, and woody ambers hold everything in place.

"We left Pigadia at first light, the bow ticking through blue glass. Saria rose out of the water like a limestone spine; the footpath gave way to scrub and herbs that broke underfoot. Thyme, rockrose, a trace of bitter green on the air. We swam, we ate bread and tomatoes with cheese that crumbled against the knife's edge, and the sun did what it always does in the Aegean, it stayed high, then fell as fast as it arrived.
On the return run the captain set down a dented tray of freshly baked baklava. The pastry was still crisp at the edges, honey pooled in the seams, pistachio and walnut roasted dark. We ate with sticky fingers as the hull thudded over small chop and the island thinned behind us. Salt on skin, honey on fingertips, warm wood, warm sugar. That moment is the perfume.”
